What are Essential Fatty Acids?
As the name suggests, Essential Fatty Acids (EFAs) are fats that are essential to good health. Higher consumption of Omega 3 oils in particular have been linked to increased cardiovascular health, improved cholesterol levels, increased joint flexibility, enhanced memory functions and higher energy levels. The body is generally thought to need a 4:1 ratio of Omega 6 to Omega 3 oils (Schlomo & Carasso, 1993). The problem is that many Americans consume amounts of Omega 6 from processed foods and poor quality oils many times greater than recommended (often as high as 20:1). By consuming a diet higher in Omega 3 oils, a more optimum ratio can be achieved.

This digestion causes the surface tension of the droplet to change, allowing the undigested inner core to pop out (as in photo 3). As the process continues, the droplets get smaller and smaller until they are completely digested.
